300g pork meat (it is better when you use the part has a little grease from pig)
Steamed rice pancake (Bánh ướt) – Buy at Vietnamese markets
Vegetables: salad, Vietnamese mint herb, basil leaves, cinnamon leaves
Dipping sauce: fish sauce, chili, honey, sesame oil, salt
1 tablespoon white sesame
Purple onion, garlic, lime

Process:

Step 1: Clean pork meat well, wait to dry and slice thinly. Marinate with sliced purple onion, minced garlic, 1 tablespoon honey, 1 teaspoon salt, 1 teaspoon fish sauce, a little pepper, white sesame, sesame oil and mix well. Wait from 3 – 4 hours.

Step 2: Bring to grill on fired coal or in grilling machine (190 degree in 20 – 30 minutes). Sometime, use small brush to spread a little broth from meat on their faces to make sure it will not be dried after grilled. Wait to get cold and add more ¼ bow fish sauce. Stir well and season to suit your flavor, and add more mixture lime water + minced chili + garlic. Put in fridge to store.

Pork blood cube (100 – 150g)

Step 8: After rice is soft in step 3, season with a little salt and add more fried squids in step 6 into pot.

Step 9: Cook with small heat, use spoon to stir gently to make sure rice will not be burnt on bottom. Then, add sliced pork blood cubes, season again and cook with small heat in 5 – 7 minutes.

Making sauce: 150g prawns, 150g grinded pork, 100g pork liver, ½ bowl sticky rice, ½ bowl soya sauce, salt, sugar, annatto seed oil, purple onion, fish sauce.
Vegetables: basil leaves, Vietnamese mint herb, mint leaves, cucumber, green star fruit or green banana
Vermicelli, rice paper, chili, roasted peanut, banana leaves for wrapping rice paper before serving in 2 – 3 hours
Wood sticks to grill

Process:

Step 1: Clean well pork grease, slice into small cubes.

Step 2: Marinate grinded pork with all spices you prepared above, use big spoon to mix well until this mixture becomes thick and soft. Cover carefully and put in fridge for 1 night (vegetable drawer).

Step 3: Next day, add a little on your hands, scoop 1 spoon mixture pork in step 2, wrap it carefully around wood stick. Repeat this step until all pork mixture is done. 1kg beef (cleaned and slice into medium square cubes – 3cm)
300g carrot, peeled and sliced into small circle shapes (1.5cm thickness)
1 tablespoon tapioca starch
1 bowl water
1 onion, peeled and sliced into small cubes
Spices: salt, magi’s stuff, sugar, fish sauce, pepper, 1 brand lemongrass (cleaned and smashed), 5 flavors starch, annatto seed flour, 2 – 3g grilled star anise.
Minced garlic, sliced ginger, minced shallot

Process:

Step 1: Add all sliced beef cubes into pot. Marinate (for 1kg meat) with 2 teaspoons salt + ½ teaspoon Magi’s stuff + 1 tablespoon minced garlic, sliced ginger, minced shallot + smashed lemongrass + 1 teaspoon fish sauce + ½ teaspoon pepper + 1 teaspoon sugar, wait for 20 – 30 minutes and then continue to marinate with 15gr 5 flavors starch + 5g annatto seed flour  + 2-3g grilled star anise. Mix well and wait more 30 minutes.

Step 2: Mix 1 tablespoon tapioca starch or corn starch with 1 bowl water.

Step 3: Put pot (added spices in step 1) on cooking stove, add more 1 tablespoon oil and fry with small heat until meat is shrunk and add a little hot water into. For covers:

300g wheat flour
40g vegetable oil
5ml Potassium carbonated (nước tro tàu) – Buy at Vietnamese Markets
200ml sugar syrup.

For mixture on top of cakes:

2 yolks
10ml water.

For fillings (8 cakes with 150g per):

100g roasted water melon seeds
100g roasted almond (separate half)
100g candies lotus seeds (separate half)
100g candies pumpkin seeds
50g ginger jam
8 yolks of salted eggs
100g roasted peanut
Lime leaves (sliced long and thin)
150g mixture grease + sugar (boil grease, slice it into small cubes and marinate with sugar in proportion 2:1, wait in 1 day)
100g sausage
5ml sesame oil
5 flavors flour (ngũ vị hương)
10ml distilled pomelo drops
Salt, sugar syrup, oil
Soft moon cake flour
Moon cake patterns.

Process:

Making sugar syrup to add into cover cakes:

Step 1: Add 1 kg sugar into 1 liter water, stir well.

Step 2: Put on cooking stove, cook until it boils; turn off the heat. You should not stir when boiling.

Step 3: From my cooking experiences of many food recipes, for helping to keep moon cakes longer, after cook mixture sugar in 20 minutes, you add more lime juice (1 fruit) into pot and continue to cook more than 5 minutes and turn off the heat.

Making fillings:

Step 4: Mix all ingredients for fillings together.

Step 5: Soft moon cake flour is the adhesive, so after mix all ingredients of fillings together, continue to add this flour and knead well.
 
Step 6: Separate into small cubes (depend on your flavor).

Step 7: Clean gently yolks of salted eggs, do not break it. Soak them into mixture white wine with some sliced ginger in 4 – 5 minutes; next bring to steam in 10 – 15 minutes.

Making covers:

Step 8: Pour wheat flour into big bowl, add oil, nước tro tàu and sugar syrup on the center. Knead gently and well until it is soft.

Step 9: Separate into small cubes equally. Roll thinly and add filling with 1 yolk of salted egg on the center and cover it well.

Step 10: Spread a little oil around moon cake pattern edges. Next, put one by one moon cake into pattern and push firmly, especially around the edges. Then, strike strongly to get moon cake out of pattern.

Step 11: Mix 2 yolks with 10 ml water.

Step 12: Set up the heat of grilling stove about 200 – 210 degree in 4 – 6 minutes before grilling cakes. Arrange moon cakes on tray added oil; bring them to grill in 5 minutes. Next, put them out quickly from grilling stove, spray a little water on cakes and wait for 5 minutes. And then use small brush to spread mixture yolks in step 11 on top and bring to grill again at 220 degree in 3 – 5 minutes. When moon cakes turn brown yellow, turn off the heat and get them out.
